Situated on the corner of 17th and Wazee Streets adjacent to the historic Oxford Hotel, Urban Farmer Denver is a modern farm-to-table steakhouse bringing “rural chic” to life in the heart of Denver just steps away from the revitalized Union Station. The culinary program, spearheaded by Executive Chef Chris Starkus, focuses on sustainable sourcing and operational transparency. Food waste, compost and oil recycling take priority in day-to-day preparation to reduce plastic and cardboard intake. Ingredients are sourced from local farmers, fishmongers and purveyors and the meats butchered in-house have been ethically and locally raised. Many of the design elements inside Urban Farmer Denver also work toward the restaurant’s sustainable efforts by integrating the act of growing and harvesting microgreens, mushrooms, aquaponicially grown herbs and honey from the rooftop apiary.
